Tangy Tomato Slices


1 cup canola oil
1/3 cup white vinegar
1/4 cup minced fresh parsley
3 Tbsp. minced fresh basil or 1 Tbsp. dried basil
1 Tbsp. sugar
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. dry mustard
1 clove garlic, minced

1 medium sweet onion, thinly sliced
6 large tomatoes, thinly sliced


Mix marinade ingredients well in a small bowl. Layer tomatoes and onion in a shallow glass serving dish. Pour marinade over top. Cover and refrigerate several hours.
