Squash Casserole

Squash Casserole


2 cups cooked, mashed butternut squash
1 cup milk
1/4 cup butter, melted
2 eggs, lightly beaten
1 cup finely crushed saltine crackers
1/2 tsp. salt
1/4 tsp. salt
1 Tbsp. sugar
1 small sweet onion, finely chopped
1 cup shredded cheddar cheese, divided


Mix all ingredients except 1/2 cup of the cheese. Pour into a greased 2 qt. casserole dish. Bake at 350° for 30-40 minutes or until set. Top with the reserved 1/2 cup of cheese and return to oven until cheese is melted.
