Sausage Brunch Casserole


1 lb. bulk pork sausage, cooked and drained (Bob Evans preferred)
1/2 cup chopped green onions
1 can (4 oz.) mushrooms, drained
2 medium tomatoes, diced
2 cups shredded Mozzarella cheese

1 cup dry pancake mix
12 eggs
1 cup milk
1/2 tsp oregano
1/2 tsp. salt
1/4 tsp. pepper


Layer sausage, green onions, mushrooms, tomatoes, and mozzarella cheese in a greased 3 quart casserole dish or 9”x13” pan.

Place remaining ingredients into a large bowl. Whisk well. Pour over top of layered ingredients. Bake uncovered at 350° for 45-50 minutes or until center is set and lightly browned. Let stand at room temperature for 10 minutes before serving.

Servings: 6-8

Note: May be assembled the night before and kept in the refrigerator until morning. Bake as directed.
