Perfect Silky Vanilla Pudding


1/3 cup white sugar
2 Tbsp. cornstarch
1/8 tsp salt
1/2 cup heavy whipping cream
1 1/4 cup milk
1 tsp. vanilla
1 Tbsp. butter


Mix together white sugar, cornstarch, and salt in a small bowl. Add cream 1/4 cup at a time, whisking until all lumps dissolve. Add milk and mix well. Transfer to a saucepan and heat on medium, stirring with a wooden spoon until thickened. Turn heat to low. Cook 1 additional minute. Remove from heat. Add vanilla and butter and stir well. Serve immediately or allow to chill, covered, in the refrigerator.
