Oven Roasted Potatoes

Oven Roasted Potatoes


1/4 cup olive oil
1 Tbsp. minced fresh garlic
1/2 tsp. dried basil
1/2 tsp. dried marjoram
1/2 tsp. dried dill weed
1/2 tsp. dried thyme
1/2 tsp. dried oregano
1/2 tsp. dried parsley
1/2 tsp. crushed red pepper flakes
1/2 tsp. salt
6 medium red potatoes, quartered lengthwise
2 Tbsp. grated Parmesan cheese


Combine all ingredients in a large bowl or large Ziploc bag. Mix until evenly coated. Place in a single layer on a baking sheet. Roast for about 30 minutes at 450° or until soft and lightly browned.

Note: Feel free to omit any of the above spices to suit your taste.
