Mrs. Miller's Zucchini Alfredo


12 oz. Mrs. Miller’s Old Fashioned Medium Noodles
2 Tbsp. Butter

3 Tbsp. canola oil
3 cloves garlic, crushed
4 cups shredded zucchini
1/2 cup milk
4 oz. softened cream cheese, cubed
1/2 cup chopped fresh basil
Salt and pepper


Cook Noodles according to package instructions. Rinse and drain. Add butter; stir and set aside. Heat canola oil over medium heat in a large skillet. Add garlic and zucchini and sauté for about 10-15 minutes. Drain if there is still a lot of moisture. Add milk, cream cheese, basil, salt and pepper and heat through until cream cheese is melted. Top with Parmesan cheese if desired. Serve over cooked noodles.

Note: My husband was skeptical about this dish when I first made it, but he ended up loving it! It's a great Alfredo sauce with zucchini.  -Maria
