Kidney Bean Tuna Salad

Kidney Bean Tuna Salad


2 cups canned Kidney beans, rinsed and drained
2 cans (6 oz. each) tuna, drained
2/3 cup chopped celery
2/3 cup shredded cheddar cheese
6 Tbsp. sliced black olives, optional
4 Tbsp. chopped red onion
4 Tbsp. chopped fresh cilantro

4 Tbsp. Olive oil or Canola oil
4 tsp. white wine vinegar
4 tsp. fresh lemon juice
2 cloves garlic, minced
1 1/2 tsp. dill weed
1/4 tsp. salt
1/2 tsp. black pepper


Combine ingredients in a large bowl. Whisk together dressing ingredients in a small bowl and pour over tuna mixture. Serve on a bed of lettuce, if desire.
