Fresh Tomato Basil & Garlic Pasta


2 lbs. fresh tomatoes
8 oz. Mrs. Miller’s Old Fashioned Angel Hair Noodles (half of a 16 oz. bag)
2 Tbsp. Olive oil (separated)
4 cloves crushed garlic
¼ cup chopped onion

1 Tablespoon tomato paste
1½ Tablespoons chopped fresh basil
Salt and freshly ground black pepper to taste.


Place tomatoes in a kettle and cover with cold water. Bring just to a boil. Pour off water and cover again with cold water to cool for a minute or two. Remove from cold water and peel. Cut into small pieces. Set aside.

Cook Noodles according to package instructions. Drain, but do not rinse. Toss with 1 tablespoon olive oil. While pasta is cooking, sauté garlic and onion in remaining 1 tablespoon olive oil in a large skillet. Be careful not to brown garlic. Sauté until just opaque.

Stir in tomato paste and immediately stir in the fresh diced tomatoes. Simmer until pasta is ready. Fold in pasta. Add fresh basil, salt and pepper and mix well. Cook on low until thoroughly warm. Serve with freshly grated Parmesan cheese, if desired.

Variation: Sauté fresh quartered mushrooms with the garlic and onions, or add shoestring zucchini along with the tomato.
