Zesty Potato Salad

Ingredients:

2 lbs. red potatoes
1/2 cup Mayonnaise
1/2 cup sour cream
2 Tbsp. prepared Horseradish
1 Tbsp. chopped fresh parsley
1/2 tsp. salt
1/2 tsp. pepper
6 bacon strips, cooked and crumbled
4 hard cooked eggs, diced
2 green onions, sliced

Directions:

Peel potatoes. Cook in salted boiling water for 20 minutes or until soft. Cut into cubes and let cool. Combine mayonnaise, sour cream, horseradish, parsley, salt and pepper in a large bowl; mix until smooth. Stir in potatoes. Add bacon bits, eggs, and green onions and stir well. Cover and chill.

Servings: 6

Note: One of our favorites! I sometimes omit the eggs if I am in a hurry and it still turns out great.
