Lemon Cilantro Chicken Noodle Soup

Lemon Cilantro Chicken Noodle Soup

Ingredients:

1 Tbsp. olive oil
1 cup chopped onion
1 ½ cups sliced carrots
2-3 cloves of garlic (crushed) 

15 cups water
¾ cup Mrs. Miller’s Chicken Soup Base
1 16oz. pkg. Mrs. Miller’s Old Fashioned Egg Noodles, width of your choice
3 cups chopped chicken
¼ tsp. black pepper
Salt to taste
Juice of 1 lemon
1 bunch of cilantro, finely chopped

Directions:

In a large pot, sauté onions and carrots in olive oil until the onions are slightly golden. Add garlic and sauté for 1 minute. Add water and soup base to the pot and bring to a rolling boil. Next add uncooked noodles, chicken, black pepper, and salt and bring back to a rolling boil. Turn heat to low and simmer for at least 20 minutes. Add lemon juice and cilantro to soup and stir. Serve warm.

Note: 
Try this recipe using Lemon Pepper Flavored Noodles and scale back the lemon juice and pepper or leave it as is for even more flavor. 

Apple Chicken with Spinach Noodles

Apple Chicken with Spinach Noodles

Instructions:

4 Skinless, boneless Chicken Breast halves
1 Tbsp. Olive Oil

2 Medium baking Apples, peeled and thinly sliced
½ cup Apple Juice or Cider
1/3 cup chopped onion
1 tsp. dried basil
½ tsp. salt

1 cup plain low-fat yogurt
1 Tbsp. Flour

1 - 16 oz. package Mrs. Miller’s Spinach Noodles

Directions:

Cook chicken and olive oil over medium heat until browned and no longer pink inside. Remove from skillet and keep warm. Add apples, apple juice, onion, basil and salt to skillet used for chicken. Bring to a boil. Reduce heat; cover and simmer until apples are tender. Combine yogurt and flour; add to skillet. Stir and cook until warm. Do NOT allow to Boil.

Cook Noodles according to package instructions, rinse and drain. Arrange noodles on a serving platter. Top with Chicken, Spoon Apple mixture over all. Sprinkle with Paprika if desired.

Bacon & Tomato Pasta

Bacon & Tomato Pasta

Ingredients:

16 oz. Mrs. Miller’s Vegetable Mix Noodles

1 lb. Bacon, fried and crumbled
3 large Tomatoes, diced
1 tsp. Basil
½ tsp. Onion Salt
1 tsp. Garlic Salt
1 cup shredded Swiss cheese
¼ - ½ tsp. crushed Red Pepper
2 Tbsp. Fresh Parsley

Directions:

Cook Noodles according to package instructions. Rinse and drain. Toss remaining ingredients with pasta. Heat and serve.

Chicken Parmesan with Noodles

Chicken Parmesan with Noodles

Ingredients:

2 lb. Chicken Breast Pieces or Breaded Chicken Patties
1 lb. Mrs. Miller’s Tomato Basil Noodles or Flavored Noodles of your choice
2 jar (25.5 oz.) Mrs. Miller’s Pasta Sauce (any flavor)
2 cups Mozzarella Cheese

Serve with Parmesan cheese

Directions:

Cook chicken until done, spread in a 9” x 13” pan. Cook Noodles according to package instructions, rinse and drain. Spread on top of chicken. Spread pasta sauce on top of mixture. Bake at 350° for 30 min. Spread Mozzarella cheese on top of mixture 5-10 min before baking time is completed.  Bake until cheese is melted. Serve with Parmesan cheese. 

Note: 

This recipe is made even better when you use 1/2 lb. bag Tomato-Basil Flavored Noodles mixed with 1/2 lb. Garlic Parsley Flavored Noodles!

Easy Ham Alfredo with Noodles

Easy Ham Alfredo with Noodles

Ingredients:

1 Pkg. 14 oz. Mrs. Miller’s Artichoke-Spinach Noodles
2 cups diced ham
1 ½ cups half & half
1 Tbsp. Mrs. Miller’s Beef Soup Base dissolved
1 ½ cups hot water
½ tsp. salt
¼ tsp. pepper
½ cup grated Parmesan cheese
1 cup shredded Mozzarella cheese

Directions:

Cook Noodles according to package instructions. Rinse and drain. Return to sauce pan. Add ham, half & half, beef soup base, hot water, salt and pepper and heat over medium heat, stirring occasionally until heated through. Then add Parmesan cheese and Mozzarella cheese and fold in just before serving.

Garlic-Parsley Pizza Toss

Garlic-Parsley Pizza Toss

Ingredients:

14 oz. package Mrs. Miller’s Garlic-Parsley Noodles.
1 cup diced green bell-pepper
1 cup diced onion
8 oz. sliced fresh mushrooms
3 Tbsp. Olive Oil
3 cups shredded mozzarella cheese
8 oz. pepperoni, sliced into thin strips

Maria’s Pizza Sauce
1 can (12 oz.) tomato paste
2 cups warm water
6 Tbsp. grated Parmesan cheese
2 cloves of garlic, minced
2 Tbsp. brown sugar
1 ½ tsp. onion powder
½ tsp. dried oregano
½ tsp. dried marjoram
½ tsp. black pepper
⅛ tsp. red pepper flakes
1 tsp. salt

Directions:

Cook Noodles according to package instructions; rinse and drain. Sauté green bell pepper, onion, and mushrooms in olive oil until almost tender, then add it to cooked noodles. Add Mozzarella cheese and pepperoni to the Noodle mixture and toss.

Combine sauce ingredients together. Let sit for 30 minutes. Next mix sauce with Noodles. Heat through and serve.

Layered Tomato Basil Bake

Layered Tomato Basil Bake

Ingredients:

1 lb. Mrs. Miller’s Tomato Basil Noodles
2 lbs. ground beef, season with salt and pepper
32 oz. jar of Mrs. Miller’s Pasta Sauce (any flavor).
6.5 oz. jar mushrooms, drained
Pepperoni slices
2 cups mozzarella cheese

Directions:

Cook Noodles according to package instructions, rinse, and drain. Brown ground beef until done. Layer beef, noodles, sauce, mushrooms, and pepperoni slices in a 9"x13" pan. Bake at 350° for 20 minutes. Spread Mozzarella cheese on top and place casserole back in oven until cheese is melted

Pizza Chicken with Garlic Parsley Noodles

Ingredients:

16 oz. Mrs. Miller’s Garlic Parsley Noodles

1 lb. Chicken Breasts, 1” pieces- uncooked, boneless, skinless
2 Tbsp. Olive Oil
1 small Zucchini, sliced
16 slices Pepperoni
1 Green Pepper, julienned
1 Onion, sliced
1 tsp. Oregano
½ tsp. Basil
¼ tsp. Salt
¼ tsp. Garlic Powder
¼ tsp. Black Pepper
1 Tbsp. Flour

1 cup Cherry Tomatoes, halved
½ cup Mozzarella Cheese
½ cup Parmesan Cheese

Directions:

Cook Noodles according to package instructions. Rinse, drain, and set aside. Combine olive oil, zucchini, pepperoni, green pepper, onion, oregano, basil, salt, garlic powder, black pepper, and flour in large bowl. Add chicken, pour into greased 9 x 13 pan. Bake uncovered at 350° until chicken is cooked. Place tomatoes and sprinkle Parmesan and Mozzarella cheese over top and bake 3 minutes, or until cheese is melted. Serve over Garlic Parsley Pasta.

Tuna Noodle Supreme

Tuna Noodle Supreme

Ingredients:

12 oz. Mrs. Miller's Old Fashioned Medium Egg Noodles or Vegetable Flavored Noodles
1 1/2 cups sour cream
1/2 cup Mayonnaise
1 cup milk
1/4 cup grated Parmesan cheese
2 tsp. Dijon mustard
1/4 tsp. salt
1/4 tsp. pepper

2 cups fresh or frozen broccoli florets
12 oz. tuna, drained and flaked
1/2 cup chopped sweet red pepper
1/2 cup sliced green onion

bread crumbs for topping

Directions:

Cook Noodles according to package instructions. Rinse and drain. Combine sour cream, mayonnaise, milk, Parmesan cheese, mustard, salt and pepper in a medium bowl and add to noodles. Add broccoli, tuna, red pepper, and green onion to noodle mixture. Stir to combine. Pour into a greased 3 qt. casserole dish. Cover and bake at 350° for 40-45 minutes or until hot and bubbly. Top with freshly chopped bread crumbs sautéed in lots of butter until browned.

Servings: 6-7

Note: I do not like to use canned "cream of" soups, so this is a wonderful alternative while making Mrs. Miller's Tuna Noodle Supreme. It is so much better, too. This is our favorite! You will love it!

Chicken & Bacon Pasta Salad

Chicken & Bacon Pasta Salad

Ingredients:

1 lb. Mrs. Miller’s Vegetable Mix NoodlesWhole Wheat Noodles, or your favorite Old Fashioned Egg Noodle cooked and drained
2 avocados, diced
4 Roma tomatoes, seeded and diced
1 cucumber, seeded and diced
¾ cup freshly grated Parmesan cheese
2 cooked chicken breasts, shredded
1 head broccoli, diced
½ red onion, diced
1 pkg. real bacon pieces
4 oz. can diced black olives

Dressing
1 Tbsp. Dijon mustard
¼ tsp. cayenne pepper
¾ cup red wine vinegar
1 tsp. ground black pepper
1 tsp. cumin
3 cloves garlic, minced
1 tsp. onion powder
¾ cup extra virgin olive oil
½ tsp. salt

Directions:

Combine ingredients in a large bowl. Whisk together dressing ingredients in a small bowl. Pour dressing over top of salad mixture. Toss well to combine. Serve at room temperature for best flavor.

Dilled Salmon Pasta Salad

Dilled Salmon Pasta Salad

Ingredients:

16 oz. Mrs. Miller’s Vegetable Mix Pasta

2 cups sour cream
2 cups Mayonnaise
3/4 cup milk
2 Tbsp. dried dill weed
1/2 cup chopped sweet onion
1 cup chopped red bell pepper
1/2 tsp salt
28 oz. canned salmon, drained and flaked or 2 lbs. fresh salmon, cooked, cooled and flaked

Directions:

Cook Noodles according to package instructions. Rinse, drain, set aside to cool. Mix together remaining ingredients and pour over noodles. Chill and serve.

Note: You can use 20 oz. canned, drained tuna instead of salmon. Mrs. Miller’s Lemon Pepper Pasta is also great to use instead of vegetable mix pasta. You can easily cut the recipe in half as well.

Easy Pasta Salad

Ingredients:

8 oz. Mrs. Miller’s Vegetable Mix Noodles or your favorite variety noodle
3½ – 4 cups Broccoli

Dressing
½ cup bottled Vinaigrette dressing
1 – 16 oz. can Chick Peas, rinsed and drained
1 – 16 oz. can Pimentos, drained and cut into strips
½ cup Feta Cheese

Directions:

Cook Noodles according to package instructions. Cut broccoli into bite size pieces. Add to noodles when they are almost done cooking. Let set for 2 min. Rinse and drain. Then place in a large bowl. Place dressing ingredients in bowl with Noodles. Toss and serve.

Pizza Pasta Salad

Ingredients:

1 pkg. 14 oz. Mrs. Miller’s Vegetable Mix Noodles
3 med. tomatoes, seeded and diced
3/4 pound of shredded cheddar cheese
1 bunch of green onions sliced
3 oz. hard Salami or pepperoni, cubed

3/4 cup vegetable or canola oil
2/3 cup shredded Parmesan cheese
1/2 cup red wine vinegar
2 tsp. dried oregano
1 clove fresh garlic, finely chopped
1 tsp. salt
1/4 tsp. pepper

Directions:

Cook the Noodles approximately 10 minutes and drain. Combine tomatoes, cheddar cheese, onions, and salami in a large bowl with Noodles. Next mix vegetable oil, Parmesan cheese, red wine vinegar, oregano, garlic, salt and pepper and pour over pasta mixture. Toss and chill.

Note: It is best to make this salad a day prior to when you plan to serve it. If salad appears dry after letting it sit a day, you can add an additional ¼ cup cooking oil.

Southwestern Pasta Salad

Southwestern Pasta Salad

Ingredients:

14 oz. Mrs. Miller’s Chili Jalapeno Noodles

1 large tomato, chopped
1 can (15.5 oz.) black beans, rinsed and drained
1 small bunch fresh cilantro, finely chopped
Juice of 1 1/2 fresh limes
1/4 cup chopped red onion
1/3 cup canola oil
1/2 tsp. salt

Directions:

Cook Noodles according to package instructions. Rinse with cold water and drain. Set aside.

Add remaining ingredients to Noodles and toss well. Refrigerate for 2 hours before serving.

Servings: 6

Ingredients:

16 oz. Mrs. Miller’s Flavored Noodles (choose your favorite)
3 sliced Carrots                                                                          
1 chopped Green Pepper
1 chopped Onion
1 cup shredded Mozzarella or Parmesan Cheese

Dressing
1 ¼ cup Miracle Whip
1/3 cup White Sugar
½ tsp. Garlic Salt
8 oz. sliced Bacon (for 1 Tbsp. Bacon bits)

Directions:

Cook bacon in skillet until done. Chill and crumble. Cook Noodles according to package directions, rinse and drain. Place in a large bowl. Add carrots, green pepper, and onion to Noodles.

Blend Miracle Whip, Sugar, and Salt well and spread over top of pasta mixture. Sprinkle bacon on top and mix. Sprinkle 1 cup shredded Mozzarella or Parmesan Cheese on top of Pasta Salad. Serve.
