Simple Baked Apples

Ingredients:

6 Granny Smith apples, peeled, cored and sliced
1/2 cup brown sugar
3 Tbsp. flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/2 cup dried cranberries
1/2 cup chopped pecans
1/2 cup whole milk

Directions:

Place apples into a large bowl. Stir brown sugar, flour, cinnamon, nutmeg, and cloves into apples until evenly distributed. Spoon into a greased 2 qt. baking dish. Sprinkle cranberries and pecans over top. Pour milk evenly over top. Bake at 350° for 45-60 minutes, or until bubbly and apples are soft. Serve with oatmeal, French toast, or as a side dish with whipped cream.

Soft Chocolate Chip Cookies

Soft Chocolate Chip Cookies

Ingredients:

4 1/2 cups all-purpose flour
2 tsp. soda
2 tsp. baking powder
1/2 tsp. salt
2 cups butter, softened
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 oz.) packages dry instant vanilla pudding powder (no milk added, only dry mix!)
4 eggs
2 Tbsp. vanilla extract
2 cups semi-sweet chocolate chips

Directions:

Sift flour, soda, baking powder, and salt together. Cream well butter, brown sugar, and white sugar. Beat pudding powder into butter mixture until well blended. Add eggs and vanilla and blend well. Stir into the flour mixture. Add chocolate chips and mix well. Drop by rounded spoonful onto ungreased cookie sheets and bake at 350 for 10-12 minutes. Edges should be golden brown.

Note: These are my very favorite and way better than any bought cookies.....packaged or from a bakery!

Tandy Cake Bars

Ingredients:

4 Eggs
1 cup Milk
2 cups Sugar
1 tsp. Vanilla Extract
2 cups Flour
¼ tsp. Salt
2 tsp. Baking Powder
1 cup creamy Peanut Butter
20 oz. bag Chocolate Chips

Directions:

Combine eggs, milk, sugar, and vanilla and beat well. Sift flour, salt, and baking powder and beat into egg mixture. Pour into greased 11x13 pan. Bake at 350° for 20-35 minutes or until springs back in center when lightly touched. Spread peanut butter over hot cake. Cool. Melt chocolate chips in microwave, then spread over top cake. Let chocolate set.

Tres Leches

Ingredients:

1 1/2 cups flour
1 tsp. baking powder
1/2 cup butter or margarine, softened
1 cup white sugar
5 eggs
1 tsp. vanilla

1 cup half n half cream
1 can (14 oz.) sweetened condensed milk
1 can (12 oz.) evaporated milk
2 cups heavy whipping cream
3/4 cup sugar
1/2 tsp. vanilla

Directions:

Sift together flour and baking powder and set aside. Cream butter and white sugar together in a medium bowl. Add eggs and vanilla and beat well. Add flour mixture slowly and mix well. Pour into a greased 9"x13" baking pan. Bake at 350° for 30 minutes. Pierce numerous times with a fork and then cool.

Mix half n half, condensed milk, and evaporated milk together in a medium bowl. Pour over cooled cake. In a medium bowl, whip cream, sugar, and vanilla until soft peaks form. Spread over top of cake. Refrigerate.

Servings: 12-15

Note: This is a Mexican dessert we have come to love. You may use Cool Whip instead of whipping cream for the frosting, but I have discovered it is not nearly as good. The cream makes the difference for us.
